KUE LAPIS – JAJANAN TRADISIONAL INDONESIA…..(LAPIS – AN INDONESIAN TRADITIONAL SNACK)

kue lapis ala tanti

My English Version…

This is the story of why I made this “Kue Lapis.”  I had some shredded coconut that was already two days old in the refrigerator.  I really wanted to make “Apem,” another traditional snack that is usually made on certain days (usually Thursday, or a certain Javanese day, such as part of a ritual to honor an ancestor). The snack is taken to the musholla (a small mosque). My late grandmother used to make this Apem and I wanted to continue the tradition in order to honor her, and also I did not want to waste the coconut, so I finally had the idea to make the Kue Lapis……:)
I mixed the cold coconut with hot water to make coconut milk. I put it in the pan and boiled it, not forgetting to add a little salt to make it tasty. I also added some pandanus leaves (to give it a nice aroma) which I took from my neighbor’s garden…heheeeee.  When the milk was about to boil I saw that it was not white like it was supposed to be, but was an orange to red color (there is a certain coconut that produces this color of milk)….I panicked a little because I wanted a white Kue Lapis….but again I didn’t want to throw it away and since I had already gone this far….well, the show must go on.
The coconut milk was too hot to make the dough, so I took a nap while it cooled. I took a long nap and the milk almost got cold….heheheee…fortunately the sugar and rice flour mixed well.  I began to think about the colour….I couldn’t make it white, but…ah ha…why don’t I make it into chocolate n’ mocca…!!
It was now time to steam the dough….I put the steam pot on the stove…the mold had already been oiled….and I placed wrapping plastic at the base of the mold (to make it easier to be taken out when it is done) and put it into the steam pot…the water boiled, time to put the dough into the mold…the first layer…n’ another layer on top….and then another layer every 5 minutes until the mold was full of layered dough.

n’…the result was not disappointing….I proudly present “Kue Lapis” ala Tanti…heheheee…!!!…so happy with my experiment….I thought I could not make it because of the coconut milk “accident,” but it was really successful n’ it “sold out”…eaten by my “customers” at home.

(thank Dan…..)
